Easy Peach Cobbler

I heard from a friend the other day who reminded me of this recipe and it fits the bill of being one of those simple but yummy dishes to make. So of course, I must share it with you. I don’t remember where I got this but I know it’s old. It was one of the first things I ever cooked that tasted good. Needless to say, I didn’t cook so well when I first got married.
You can use l large can or 2 small cans of peaches. I get the kind in heavy syrup.
1 stk. of margarine or butter
vanilla extract
1 1/4 of self rising flour
1 cup sugar
3/4 cup milk
(This recipe was originally 1 cup of flour ,1 cup sugar, 1 cup milk, but I have modified it to my family’s taste)
Mix together flour, sugar, milk, and vanilla Set aside.
In a 9×11 glass casserole dish melt the margarine in the oven . Remove from the oven and add peaches. (do not drain) Return to oven until peaches are hot.
Pour batter mixture over the top and bake at 350 for about 30 minutes. Increase heat to 450 and bake another 10 minutes.
Put a scoop of vanilla ice cream over this and it is yummy, yummy, yummy. Again, let me know if you try it or if you have any questions. Enjoy!

I was given a starter mix yesterday for an amish pound cake. I haven’t fixed on of these in years and the one I did then was a friendship cake (fruit cake). I had a piece of one a couple of weeks ago and it was yuuummmmmy. I will share if anyone wants a starter. I will have three in about 1 week.

I did this when we were at the beach the first of August, but a stick of margarine turned out to be way too much. Is your cobbler not greasy, greasy when you use that much margarine? Mine was literally swimming in it. Or maybe I did something wrong.

You can cut back on the margarine if you want. But if you use real butter it is so much better. It has never been too much when I made it but I stir the margarine in with the peach syrup before I pour on the topping. You can try that and see if it helps or you can just use less margarine.
